SOUS-VIDE RECIPES
Sous-vide cooking comes from French, in German we say vacuum cooking. This method of low temperature cooking for food and meat is almost 50 years old.
The meat, fish or vegetables are cooked in a reusable plastic bag in a water bath below 100 ° Celsius. Whether fish, meat or food, each has its own specific cooking temperature, this is the so-called point where the protein denatures. Vacuum cooking allows food to be brought to exactly the temperature at which it is in its optimal condition.
As we know, tastes are different, so the optimal state is of course a matter of taste. Some like their fish through, some glassy, others want it through more, what is nice about it - once you have found the optimal temperature for yourself, the result can be reproduced over and over again.
